italian goulash

for regular size crock pot or rice cooker (mine was 2x so i had more volume of ingredients)

ingredients:

  • 1 jar of some tasty pasta sauce (i like spicy)
  • 1 pack of beyond sausage
  • 1 pack of "soyrizo" <-- secret ingredient very important !!!
  • 2 large onions or 3 small ones (red)
  • 2 packs of mushrooms (take your fave, i like crimini)
  • 1 pack head of broccoli
  • 1 box / small pack of "pasta shells"
  • 2 boxes of veggie broth
  • 2 fistfulls of spinach or kale / collard if you prefer. chop the collard if it's too big

condiments:

  • 1 jar of minced garlic (i used garlic powder or garlic salt)
  • 1 jar olive oil
  • 1 jar coconut or grape seed oil
  • 1 jar of "italian spices"
  • 1 small block of "Violife" vegan parmesan, grated <-- secret ingredient wicked important!
  • a few pinches of salt or even better: spike
  • a few pinches of pepper
  • a tablespoon or 2 of ground coriander <-- secret ingredient

steps:

  1. wash off the mushrooms and slice with egg slicer (or knife)
  2. chop up the broccoli and onions
  3. throw in to the pot:
the onions, the spinach, the pasta shells, 
pour in the pasta sauce
pour some veggie broth into the sauce jar, seal, shake, and pour that in (gets the rest of the pasta sauce out!)
add salt / spike / pepper / italian spices, to taste
	don't need much salt if you did NOT get "low sodium" veggie broth
	i like a lot of "italian spices" for fragrance and flavor, several tablespoons
a big spoon full of minced garlic (more if you like), or garlic powder / garlic salt
squeeze out the soyrizo
pour in some olive oil to taste (i like several tablespoons, just let the bottle go "glik glik glik" for a second or 2)
pour in the rest of the veggie broth (it washes over the other ingredients and settles them into the pot)
no need to stir at this point

Depending on your pref: if you like crispy veggies, save the mushrooms and broccoli for later.

If you don't care that they're crispy, easiest to just throw it all in

Start the cooker!!!

Now that everything is in the pot, you can multitask:

  1. while that is cooking, slice the beyond sausage into small chips (medalions)
  2. fry on high heat with coconut or grape seed oil
  3. fry long enough to go brown on one side (you'll get good at it, don't worry)
  4. flip and fry the other side
  5. scrape all that into the pot
  6. grate the parmesan
  7. when the pot starts bubbling you can stir it to mix up the ingredients
  8. wait for it to be done!
  9. unplug the pot
  10. if you didn't throw in crispy veggies, do that now, and stir again
  11. maybe wait a bit for it to cool

serve in a bowl, put a buncha parmesan on top, and the coriander, mix that in, and eat it YUM!

i realize this list can SEEM daunting but after the first time it goes fast and is actually quite easy.
