Is there a software program (preferably free) that you recommend for encoding quicktime movies into mp3 audio files?

Well, obviously i recommend my own LAME:

your question makes me want to clarify: MP3 is audio only, any video will be discarded if you use QuickTime player to export from a movie file.
However you can install the LAME plugin, configure your kJams prefs to use it, then add your songs to kJams, then convert them in-place quite easily.
