changing the stuff in the video tab

Hi!

How do you change the things in the video tab, like the "tip your waitresses" screens and stuff.. I don't want it to say kjams on the screen, nor do I work at the lava lounge, so i was wondering how we go about personalizing these cool widgets so that they're applicable to our show..
