Enable the Special Characters palette in the Edit Menu

Is kJams missing a feature you need? Post it here! Note: if iTunes has it but kJams doesn't, it's a good bet kJams will have it, but that I just haven't gotten around to it yet. But go ahead and request it anyway!

option-u then the vowel getting the umlaut:

ä ë ï ö ü

Same for é : option-e then the vowel getting the accent.

Much faster than looking them up in a palette.

Thanks for the tip, but that's not only why I wanted the palette, there's a lot more crap in there.

I will totally do that! Meanwhile, you can enable the input menu in apple->system prefs->international->input menu->show input menu in menu bar

then check off the languages you want, be sure to include "character palette" and "keyboard viewer".

After that, a little flag appears on the right side of your menu bar. From there you can always pick "Show Character Palette" which will get you what you want.
