with Perian installed, flv files are readable. Exporting audio track in aiff works properly. Exporting in mp3 with Lame3.97 (installed with installer 1.2) doesn't work. The result is just a small 10ko garbled file.

this is a n Apple bug in the way that quicktime interacts with perian and LAME, it is not a bug that i can fix. Apple does not have incentive to fix this bug since they do not want to support third party MP3 encoders.

Thanks for your prompt reply. Meantime, much to my surprise, encoding is working with MPEG Streamclip 1.9.1... (although MPEG Streamclip uses QuickTime components...). Otherwise, no problem with ffmpegX.
